Unless you already know that your server will have very high scalability requirements, I wouldn't worry about performance at this stage. The overhead of copying some data in memory is vanishingly small compared to that of sending data over the internet.

This question is confusing. Could you clearly state what exactly you're trying to do, how exactly you've tried doing it and in what ways your current solution fails? It's hard to tell just from reading the code. For complex collision or physics stuff, pictures are often really helpful.

I don't really understand the question. Are you asking for how to model the physics of a pong game or how to detect the collisions? The physics for the original pong aren't at all realistic; do you want to have similar ones or actually accurate ones?
