There is no reason to override the method collidesWith unless you want to handle the collision checking all by yourself. Overriding onUpdate is just the way of achieving what you want, it will run user-defined code on every step and you're free to do whatever you want with it. Just make the body of onUpdate slim, because this code will run very often and could slow down you application.

That's because ragdoll is exactly what the name says. It is good at being tossed around, making it move is very hard. If you think you can make it work like this, try playing this game for a while: foddy.net/Athletics.html and then think again. You could just animate some sprites and when you need the character to fall, simply read the sprites' coordinates and attach a ragdoll in the same posture and velocity.

The question was "The problem is that when the sprite reaches the top wall, it crashes. How can I fix this?" From what I could understand from the question, this could well be that the roof (which is an object taken from an AndEngine example) prevented the object created by OP from ascending above the screen. This was by no means a tip or a suggestion.

Not that I know of. You can perform some checks in onUpdate() though, for example look if the body is rotating properly and give it a little nudge or slow it down a bit.

Either body.setTransform(x, y, angle) to just set the rotation angle or body.applyAngularImpulse(impulse) or body.applyTorque(torque) to make the body rotate.

What you said is compatible with what I said - the last step is indeed too long ago, but it is caused by the fact that when the CPU is under load, the engine cannot keep up and makes steps that are too large.
