The end goal is to make a game. It doesn't matter how you get there. The player does not care; the player just wants to have fun. Whatever methodology you choose to implement to make your life easiest to turn an empty project into a completed project is up to you. No methodology is perfect.

I've added a C# example now. I think I was getting confused with your UnityScript example code at the bottom of your post, and overlooked that you were using C# with UI.Text above. If you use just the CanvasScaler with "Scale With Screen Size", you won't actually need to use any code at all to change font sizes.

Try using Rigidbody.MoveRotation. Though if that doesn't give you the same functionality as Transform.RotateAround, use Transform.RotateAround on a hidden dummy GameObject, and then have your actual GameObject with the Rigidbody use Rigidbody.MovePosition and MoveRotation to match the dummy's position and rotation.

Are you modifying its transform.position every frame? Because this causes the Rigidbody to basically "leave" its current position and "enter" anew. If so, try using Rigidbody.MovePosition instead, which is the cleaner way to move an object that has a Rigidbody.

Nothing wrong with ad-hoc game design. Code as you go. Worked for me with great success. After all, the average end consumer just wants to play something fun, and the story of how you got to delivering the end product will vary from one developer to the next. Try it, go for it. Ideas on paper are great, but the real text that makes your game work is in the code. If you have a fun idea, code it in. If it's fun, keep it. If it sucks, take it out. Use your code and class structure as your living design document. Change it as you will.
