I love these old school type games that Kairosoft are doing which are a bit like Theme Park, all stat based stuff. I was wondering where I should start looking into developing something like the Kairosoft games on iPhone.

For anyone that hasn't seen them, they are retro simulation games. Here is a quick video of Game Dev Story http://www.youtube.com/watch?v=DsMMnnOp7RU which is quite simple, although the NPCs in Pocket Academy seem much more sophisticated http://www.youtube.com/watch?v=HUXL2asK72s

I understand how to take logs on in game stuff like unlocks and statistics of NPCs, i'm just unsure how you give the NPCs a kind of AI so they move about and do stuff based on their stats.

I know this is a bit of a big question, but any guidance where I could look into something like this would be great.

Agreed; you would be better served asking more specific questions about the specific features you are trying to implement and things you are seeing go wrong or are getting stuck with. – Josh Petrie Jul 28 '11 at 14:45
Thanks for the hugely helpful sarcastic response duly noted. – benpalmer Aug 10 '11 at 16:32
